Buffalo Cauliflower Bites



Let me warn you- these things are addicting!  They even got approval from my husband who does not typically like when I make healthier substitutions for his favorite foods.  He loves his usual buffalo wings, but was really impressed with the way these came out. 

This recipe was inspired by Skinnytaste's recipe - but I tweaked it to make a bit healthier. 

Ingredients: 
1 cup water
1 cup all purpose flour
2 tsp garlic powder
22 oz (6 1/2 cups) cauliflower florets
3/4 cup Buffalo sauce 
1 tbsp melted coconut oil

Directions:

  1. Preheat the oven to 450°F. Lightly coat a large non-stick baking sheet with oil.
  2. Combine the water, flour, and garlic powder in a bowl and stir until well combined.
  3. Coat the cauliflower pieces with the flour mixture and place on the baking sheet; bake for 20 minutes.
  4. While the cauliflower is baking, combine the buffalo sauce and melted coconut oil in a small bowl.
  5. Pour the sauce mixture over the baked cauliflower and continue baking for an additional 5 minutes. We dipped it in Bleu cheese dressing and it was delicious!

Guacamole Chicken Salad


Eating healthy does not have to be time-consuming, difficult, or elaborate. You can make a delicious meal for yourself without much time or effort as long as you keep the right things stocked and crapped in your fridge (you can do a lot with cooked chicken breast).  

Ingredients

1 small cooked chicken breast
100 calorie package of Wholly Guacamole
Lime Juice
Sriracha
Bread

Directions  

I shredded up a small chicken breast (I keep a few cooked up in the fridge to have on hand for sandwiches and salads). I mixed it with one 100 cal pack of Wholly Guacamole (if you don't own these things then do yourself a favor and get some ASAP). Then sprinkled some lime juice on top and a few drops of Sriracha and threw it on a sandwich thin.  I would normally put this on Ezekiel bread or in a wrap, but all I had this go around was the sandwich thin.  Not the healthiest option but I don't sweat it!
